Description
Mediterranean grilled chicken is so versatile and easy. Impress a crowd, make some work lunches or throw it in a pita.
Ingredients
- 1 teaspoon Old Bay Seasoning
- ½ teaspoons Turmeric
- 1-¼ teaspoon Paprika
- ½ teaspoons Oregano
- ½ teaspoons Cumin
- 1 teaspoon Zatar
- ½ teaspoons Aleppo Pepper
- ¾ Tablespoons Kosher Salt
- 2 Tablespoons Olive Oil
- ½ Lemon, Juiced
- 3-½ pounds Boneless, Skinless Chicken
Preparation
Open a large resealable bag and add measured dry spices along with the salt. Move the bag around to incorporate the spice mixture so it is well blended.
Drizzle in olive oil and lemon. Mix again until it is a nicely blended marinade.
Put all the chicken into the bag. If using chicken breast, make sure to slice each breast in half so it is roughly the same thickness as the thigh. This will ensure even cooking times later on.
Seal the bag and take a few minutes to massage marinade into chicken by moving the bag around. Make sure all sides of the chicken look like they are evenly covered with the marinade.
Place in fridge until ready to use, preferably after 1 to 8 hours.
BBQ on a well-oiled grill until chicken reaches an internal temperature of 165ºF. Rotate throughout cooking for even cooking and nice grill marks.
Let sit 10 minutes before slicing.
