Got 5 minutes? Spiff up your breakfast and make it interesting with this delicious Mediterranean scramble.

Ingredients

  • 1 Tablespoon Vegetable Oil
  • ⅓ cups Tomato, Diced (roughly Half A Medium Tomato)
  • 1 cup Baby Spinach
  • 3  Eggs
  • ⅛ cups Feta Cheese, Cubed Or Crumbled
  • Salt And Pepper, to taste

Preparation

Heat oil in a frying pan on medium heat. Saute tomatoes and spinach until spinach is wilted. Add eggs and mix to scramble.

After 30 seconds, add feta cheese. Continue to cook until egg is cooked to your preference. Season with salt and pepper.
