Description
Get a last taste of summer with this layered dessert featuring watermelon, cantaloupe, and honeydew mousse.
Ingredients
- 1-½ teaspoon Powdered Gelatin
- ⅛ cups Cold Water
- 1 cup Melon Puree
- ¼ cups Sugar
- 2 teaspoons Lemon Juice
- ½ cups Cold Cream
- ¼ teaspoons Vanilla Extract
- Fresh Mint For Garnish
Preparation
Place gelatin and cold water in a small bowl to soften.
Place melon puree in a medium saucepan with sugar and lemon juice and heat on low until the sugar dissolves. Add softened gelatin to the mixture on the stove, heat, and stir until gelatin dissolves. Remove from heat and chill mixture in fridge until it thickens.
Whip cream in a large mixing bowl to soft peaks. Add vanilla to melon mixture and then fold whipped cream until all the lumps are removed.
Pour into individual serving glasses and chill in the fridge until set, at least 45 minutes. Garnish with mint and enjoy this last taste of summer.
Note: Repeat two times with different types of melon if you’d like to achieve a layered dessert effect. Prepare each mousse, chilling between each layer, to produce a firm set so the lines will be well-defined.
