Description

The book ‘Alice in Wonderland’ has been a favourite of ours since childhood and, although we’re now grown-ups , this fantasy land of talking animals, tea parties and nonsense is every bit as irresistibly charming to us now. Wouldn’t it be lovely if we could bring a little bit of that magic to our everyday lives? This cake is inspired by the small “Eat Me” cake featured at the beginning of the book.

Ingredients

  • 1 cup Plain Flour
  • ¾ teaspoons Baking Soda
  • 1 Tablespoon Unsweetened Cocoa
  • ¼ teaspoons Salt
  • ¾ teaspoons Cinnamon
  • ⅛ teaspoons Ground Cloves
  • ⅛ teaspoons Ground Nutmeg
  • ⅛ teaspoons Allspice
  • ¾ cups Brown Sugar
  • ¾ cups Apple Sauce
  • ¼ cups Vegetable Shortening
  • 1 whole Egg
  • ½ cups Chopped Dates
  • ¼ cups Currants
  • ¼ cups Chopped Pecans

Preparation

1. Preheat oven to 180º C. Grease and flour two 10cm round mini spring form, non-stick cake tins.

2. Sift flour, baking soda, cocoa, salt and spices straight into the bowl of a stand mixer. Add brown sugar and mix to combine. Add apple sauce and shortening and mix until well combined. Add egg and mix further until combined.

3. Empty into a large bowl and fold in dried fruit and nuts. Evenly divide the batter between the prepared pans. Bake for 30-35 minutes, until a toothpick inserted in the centre comes out clean.
