“Moon Over My Spammy” Skillet Sandwiches

Description

A fun breakfast-for-dinner parody reminiscent of the comforting fried bologna sandwiches my dad made for me when I was a kid. Note: You can make these with half the meat for a lighter sandwich. These are pretty big!

Ingredients

  • 8 slices Thick Bread (like Texas Toast)
  • 3 Tablespoons Butter (or To Taste)
  • 4 slices American Cheese
  • 12 ounces, weight Can Of Spam
  • ¼ cups Brown Sugar
  • ½ cups Apple Juice
  • 4 whole Eggs

Preparation

Heat 2 greased skillets — a smaller one over MEDIUM-LOW heat and a larger, deeper one over MEDIUM-HIGH heat.

Meanwhile, butter and toast eight thick slices of bread in your toaster or toaster oven. As soon as toast is your desired level of brown, place the American cheese on 4 pieces of the hot toast to let it start warming/melting a little bit.

Combine the brown sugar and apple juice in a spouted measuring cup; stir well.

Open can of Spam; drain or pat dry. Slice meat on the wide angle into 8 thin, squarish pieces.

Place the meat slices in a single layer in the bottom of the larger heated pan. Immediately pour the sugar/juice mixture over the heating meat and allow to simmer for several minutes on each side.

In the smaller greased skillet, cook the eggs separately any way you like while the meat is heating. (We eat ours over medium.)

Layer 2 Spam slices and 1 cooked egg over the warm cheese toast and make sandwiches. Garnish with orange slices or fresh tomato.
