Morning After Prime Rib Hash

Description

If—and that is a big IF—there is any prime rib left from the night before, you can make this hearty breakfast hash.

Ingredients

  • 3 cups Cubed Leftover Prime Rib Roast
  • 2 whole Bell Peppers
  • 8 whole New Potatoes
  • 1 whole Onion
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Balsamic Vinegar
  • 1 Tablespoon Black Pepper

Preparation

These instructions are basic. Please add in whatever you like from your fridge. You can add leftover vegetables from the night before, more or less depending on how many people you are feeding.

1. Cut up leftover prime rib into cubes.

2. Cut up onions, peppers and any other veggies into chunks.

3. Heat olive oil in a large heavy pan.

4. Cook potatoes cut side down until you get a crust forming. Add in the onions and peppers, cooking until they start to caramelize, stirring them up to cook evenly.

5. Add in beef and put a lid on, slightly ajar, so the steam can escape. Finish cooking until potatoes are tender.

6. Finish off by adding the balsamic vinegar and black pepper, and cook a minute or two longer to evaporate liquids.
