Muffin-Egg Ham Melt

Description

I usually only have coffee for breakfast, but one night a week I cook what could be considered breakfast items. And some Sundays lend themselves to a leisurely breakfast. This particular combo is one that works well as a light meal or to make ahead and warm up for a quick breakfast on a school morning. They also would be ideal to take camping.

Ingredients

  • 12 slices Round Deli Ham
  • 1 package Cornbread Mix (8.5 Ounce Package)
  • 1 whole Egg
  • ⅓ cups Milk
  • 4 whole Eggs
  • 6 Tablespoons Water
  • 12 Tablespoons Grated Cheese

Preparation

Preheat oven to 400 F. Lightly spray a 12 count muffin pan with oil.

Place 1 slice of ham in each opening in the muffin pan.

In a medium sized bowl mix the cornbread mix with the 1 egg and 1/3 cup milk. Dividing the batter evenly, spoon the cornbread mixture on top of the ham.

In another medium sized bowl mix the 4 eggs and water. Dividing evenly, spoon the egg mixture on top of the cornbread. Top each with 1 tablespoon of grated cheese.

Bake at 400 F for 20 minutes.
