Mushroom Bean Dip

    Description

    White beans, mushrooms, and onions combined into one creamy dip.

    Ingredients

    • 1 cup Fresh Mushrooms, Sliced
    • ¼ cups Red Onion, Chopped
    • 1 teaspoon Minced Garlic
    • ¼ cups Olive Oil, Plus 2 Tablespoons, Divided
    • 1 can (15 Oz. Size) White Beans, Drained
    • 2 Tablespoons Lemon Juice
    • ¾ teaspoons Salt
    • ¾ teaspoons Pepper

    Preparation

    Saute the mushrooms, onions, and garlic in a sauce pan with 2 tablespoons olive oil. Cook about 5 minutes or until the vegetables are soft. Let cool for a few minutes.

    Combine the beans, the cooked vegetables, remaining oil, and lemon juice in a food processor. Pulse until creamy. Stir in the salt and pepper. Refrigerate leftovers.
