Description

Easy mushroom flatbread pizza with fresh mozzarella, green onion, and an infused olive oil that makes it extra special!

Ingredients

  • 1 Tablespoon Butter
  • 1 Tablespoon Olive Oil
  • 4 ounces, weight Sliced Mixed Mushrooms
  • ½ teaspoons Kosher Salt
  • ¼ teaspoons Black Pepper
  • 4 whole Whole Wheat Flatbreads (7 Inch)
  • 4 ounces, weight Fresh Mozzarella, Thinly Sliced
  • 1 teaspoon Chopped Fresh Thyme
  • 2 whole Green Onions, Thinly Sliced (white And Green Parts)
  • 2 teaspoons White Truffle Oil
  • 2 Tablespoons Grated Parmesan Cheese

Preparation

Preheat oven to 400ºF.

In a 10-inch skillet, melt butter with olive oil over medium heat. Add mushrooms and saute them until browned, about 10 minutes. Season with salt and pepper and remove pan from heat.

Lay out flatbreads. First, using a pastry or barbeque brush, coat them with the leftover butter and oil from the pan of mushrooms. There should be just enough to lightly coat the flatbreads. If not, drizzle 1 teaspoon of olive oil over the top of each flatbread. Top each flatbread with mozzarella cheese, mushrooms, a sprinkle of thyme, and green onions.

Bake pizzas at 400ºF for 5–10 minutes, or until cheese is melted. Drizzle truffle oil over the top of the flatbread (about ½ teaspoon per pizza). Sprinkle Parmesan cheese over the top, slice, and serve.
