The best summer dessert will always have stone fruit. This plum and nectarine cobbler will make anyone smile!
Ingredients
- FOR THE FILLING:
- ¾ cups Sugar
- 2 Tablespoons Cornstarch
- ⅓ cups Flour
- ½ teaspoons Cinnamon
- ½ teaspoons Vanilla Extract
- 1 Lemon, Juiced
- 6 Nectarines Cut In 6 Pieces
- 8 Plums Cut In 6 Pieces
- FOR THE TOPPING:
- 1 Tablespoon Sugar
- 1 cup Flour
- 1-½ teaspoon Baking Powder
- ½ Tablespoons Salt
- 4 Tablespoons Cold Butter
- ½ cups Milk
Preparation
Preheat oven to 375ºF.
Place all the filling ingredients in a large bowl and toss it all together. Pour into a baking dish and set aside while you make the topping.
In a medium bowl, whisk sugar, flour, baking powder, and salt together. Work butter into flour mixture until pea-sized lumps form. Stir in milk to form a dough. Use your hands to form small biscuits and place them on top.
Bake at 375ºF until golden and bubbling, about 50–60 minutes. Best served hot with a scoop of ice cream on top.
