These Nutella Stuffed Pancake Bites are quick and easy breakfast that’s packed with flavor!
Ingredients
- 2 cups All-purpose Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- ½ teaspoons Salt
- 2 cups Vanilla Greek Yogurt
- 1 Egg
- 1 cup Milk (any Kind)
- 1 teaspoon Vanilla Extract
- ¾ cups Nutella (or Hazelnut Spread)
Preparation
Preheat oven to 350ºF. Lightly spray two 24-count mini muffin tins with nonstick cooking spray. Set aside.
In a large bowl, combine flour, baking powder, baking soda, and salt. Set aside.
In a medium bowl, whisk yogurt, egg, milk, and vanilla extract. Stir wet ingredients into dry ingredients until just combined.
Fill each muffin tin 1/4 full. Spoon 1/2 teaspoon of Nutella into each tin. Top each tin with remaining batter, filling 3/4 full.
Bake for 15–17 minutes, or until center is set and lightly golden. Remove from oven and let cool for 10 minutes. Then move to a wire rack to cool completely.
Serve with sliced strawberries and powdered sugar or maple syrup, if desired. Enjoy!
