Oatmeal Banana Chip Pancakes

Description

Say goodbye to the plain old pancake that needs tons of butter and syrup to satisfy your taste buds. I don’t think pancakes should need toppings to taste good. The toppings should add to the pancake, but in no way should they be the star of the dish. Bananas, oats, cinnamon, peanut butter and a few chocolate chips make these pancakes so delicious and satisfying that sometimes I don’t add a single topping to them.

Ingredients

  • 2  Ripe Bananas, Peeled
  • 1 teaspoon Baking Powder
  • 2  Eggs
  • 3 Tablespoons Almond Milk
  • 1 Tablespoon Olive Oil
  • 1 pinch Salt
  • 1 teaspoon Cinnamon
  • 1 Tablespoon Peanut Butter
  • ¼ cups Whole Wheat Flour
  • ¾ cups Oats
  • ⅓ cups Chocolate Chips
  • 1 Tablespoon Butter

Preparation

1. In a medium mixing bowl, mash your ripe bananas with the baking powder.

2. Add the eggs, milk, olive oil, salt, cinnamon and peanut butter. Mix well.

3. Slowly stir in the whole wheat flour, oats and chocolate chips.

4. In a skillet, griddle or large frying pan on medium heat, melt 1/2 of the butter.

5. Once melted, drop four spoonfuls of the mixture into your pan, each about 2 1/2″ in diameter and leaving space in between them.

6. Flip once the bottoms look golden brown, after about 2-3 minutes. Cook for another 2-3 minutes on the other side until the middles look done. Remove from pan.

7. Add the remaining 1/2 of the butter and repeat with the remaining batter.

8. Top with your favorites!
