Description
Healthy, hearty oatmeal is dressed up with sugar-crusted bananas, buttery coconut, and toasted walnuts.
Ingredients
- 2 cups Water
- 1 cup Old Fashioned Rolled Oats
- 1-½ Tablespoon Butter, Divided
- ¼ cups Chopped Walnuts
- ¼ cups Sweetened Shredded Coconut
- 1 whole Banana, Sliced 3/4 Inches Thick
- 3 Tablespoons Brown Sugar
- ⅓ cups Milk, To Serve (optional)
Preparation
1. In a small saucepan, bring the water to a boil over high heat. Reduce heat to medium, add oats and simmer for 5 minutes, or until oats are soft and most of the water has been soaked up. Remove from heat and divide into bowls.
2. Meanwhile, melt 1/2 tablespoon butter in a small skillet. Add walnuts and coconut and toast until browned, approximately 2 minutes. Remove from skillet and sprinkle over the oatmeal.
3. In the same skillet, melt the remaining 1 tablespoon of butter. Add banana slices then sprinkle brown sugar over top. Cook for 1 minute, then flip. Cook the other side about 1 more minute, or until both sides are golden brown.
4. Divide bananas up between the 2 bowls then serve hot with milk and additional brown sugar, if desired.
