Description
These are so pancake-y and creamy and have lots of protein thanks to the Greek yogurt. The texture is soft and yummy.
Ingredients
- 2 cups Old Fashioned Oats
- 2 cups Plain, Greek Yogurt (2%)
- ¼ cups Olive Oil
- 2 whole Egg
- ½ cups Whole Wheat Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Cinnamon
- 1 teaspoon Vanilla
Preparation
Mix oats and yogurt. Let sit for 5 minutes. Stir in oil and eggs. Add remaining ingredients and mix lightly. Batter will be very thick. Scoop (like cookie dough!) onto a hot griddle. Carefully flip over and smoosh down with a spatula to make pancakes. The middles will remain soft, but cooked through.
Serve with butter, real maple syrup, and chopped apples or pears.
