Description

I wanted to start the day with an energy boost, so I made a super delicious breakfast.

Ingredients

  • 2  Eggs
  • 1 pinch Salt
  • 1  Small Summer Squash, Diced
  • 4  Small Mushrooms, Sliced
  • 3 Tablespoons Fresh Cheese
  • 1  Small Green Onion, Chopped
  • 5  Cherry Tomatoes, Diced
  • 1  Small Hot Pepper, Diced
  • 1 Tablespoon Chopped Parsley

Preparation

Whisk eggs with a pinch of salt and set aside.

In a pan over high heat, fry summer squash and mushrooms for 5 minutes. Transfer to a bowl and let cool.

To the bowl, add cheese, green onion, parsley, tomatoes, and pepper.

Heat a 26cm diameter fry pan. Pour in the whisked eggs and tilt the pan to spread it evenly. Cook with the lid on, without flipping it.

Assemble the “tortilla,” wrapping the vegetable mixture. Serve with hot sauce.
