Ingredients
- 500 grams Pilaf Rice
- 2 teaspoons Freshly Chopped Parsley
- 4 teaspoons Olive Oil, Divided
- ½ teaspoons Salt
- 1000 milliliters Water
- 1 Small Red Onion, Chopped
- 2 Medium Chicken Legs
Preparation
Preheat oven to 450°F (230°C).
In an ovenproof dish, add rice, parsley, 1 teaspoon of olive oil and salt. Stir well and cover with water. Bake for about 20 minutes.
In the meantime, in a large frying pan, add remaining 3 teaspoons (1 tablespoon) olive oil and chopped onion. Cook over medium heat until translucent. Add chicken and cook for 5 minutes on each side. Remove from heat.
Add chicken legs with onions to the rice (stir a little bit). Bake for 1 hour and 10 minutes on 390°C (200°C) until rice absorbs all the water and creates a golden brown layer on top.
Let cool for 10–15 minutes before serving.
