Description
This super easy oven baked chicken is the perfect updated comfort food. Still warm and hearty, but oven-baked with only a handful of fresh ingredients you probably already have in your kitchen!
Ingredients
- 1 teaspoon Lemon Zest
- 1 Tablespoon Fresh Rosemary, Finely Chopped
- 2 cloves Garlic, Finely Chopped
- ½ teaspoons Coarse Sea Salt (If Using Table Salt, Reduce Amount Slightly)
- ⅛ teaspoons Pepper
- 2 Tablespoons Olive Oil
- 2 whole Lemons, Quartered
- 4 pieces Chicken, Bone In, Skin On
- 4 slices French Loaf, Torn Into Bite Size Pieces
- 2 cups Spinach
Preparation
Preheat oven to 450°F.
Add lemon zest, rosemary, garlic, salt, pepper and olive oil to a bowl and mix.
Add lemon wedges and chicken, skin side up, to a baking pan. Coat with the olive oil mixture, rubbing it into the chicken and lemon.
Bake for 35–40 minutes. Remove chicken and lemon wedges and set aside.
Place the torn bread pieces into the pan and coat with the pan drippings. Bake for 5–7 minutes, until lightly browned. Remove from oven, add spinach and coat with remaining seasoning in pan.
Serve chicken on bed of spinach. Add croutons and lemon wedges for garnish or additional flavor.
