Description
Packed with veggies and flavor this Paleo fried “rice” is super easy to make and great for meal prep during the week.
Ingredients
- 2 Tablespoons Avocado Oil
- 3 Eggs, Whisked
- 1 teaspoon Salt
- ½ teaspoons Pepper
- 2 Tablespoons Ghee
- 3 cloves Garlic, Minced
- 2 Small Carrots, Diced
- 2 stalks Celery, Diced
- 2 Green Onions, Diced, Plus More For Topping If Desired
- 4 Tablespoons Coco Aminos
- 4 cups Riced Cauliflower
- 1 teaspoon Toasted Sesame Oil
Preparation
Gather and prep all ingredients. For the cauliflower, it’s easiest to put the raw pieces into a food processor and pulse until the size of rice. Otherwise, you can cut it by hand.
Place a wok or nonstick pan over medium high heat. Once hot, add avocado oil, eggs, salt and pepper. Mix continuously until eggs are scrambled and almost done. Transfer eggs to a bowl and set aside. They will continue to cook for a bit while waiting in the bowl.
Add ghee to the pan. Once melted, add garlic. Sauté for 30 seconds, stirring constantly so the garlic doesn’t burn. Add carrots, celery, and green onions. Cook for a few minutes, stirring occasionally.
Add riced cauliflower and coco aminos. Stir to combine everything. Cook, stirring occasionally, for 3–5 minutes, depending on how cooked you like your veggies.
Once done, remove pan from heat. Toss scrambled egg and toasted sesame oil in the pan and serve with extra green onions if desired.
