You can still join #TacoTuesday while being gluten free or paleo! These are free from grains, dairy, and soy. Choose a store-bought grain-free or homemade tortilla, or a rice tortilla if tolerated.
Ingredients
- 1 pound Ground Beef
- ¼ teaspoons Sea Salt
- ½ teaspoons Garlic Powder
- 1 Tablespoon Coconut Aminos
- 1 cup Fresh Pineapple
- 1 Tablespoon Tapioca Flour
- 8 Tortillas
- 2 Scallions, Chopped, For Topping
Preparation
Brown ground beef on medium heat in a large skillet with salt and garlic powder. Turn heat down to low-medium. Add coconut aminos, pineapple, and tapioca flour and stir. Cook for 10 minutes.
Heat tortillas of your choice either stovetop or in a microwave. Serve with taco meat and top with scallions.
