Description
I was sitting around down nothing, reading an already read short story by Edgar Allan Poe, when the idea to invent a weekend brunch recipe came upon me. Thus was born the dish POE, an acronym for Pancake Omelet Envelope.
Ingredients
- 1 cup Flour
- 1 teaspoon Salt
- 5 whole Eggs
- ½ Onions, Roughly Chopped
- ½ Bell Pepper, Roughly Chopped
- 5 grams Unsalted Butter
Preparation
In a bowl, add flour and 1/2 teaspoon salt. Add eggs and mix with fork until smooth. Add onions and bell pepper, and season with remaining salt.
Melt butter in a nonstick pan over medium heat. Pour half of the mixture into the pan and spread it like a pancake. Cook for 5 minutes. When the sides start to separate from the pan and the center has cooked, fold like an envelope. Let rest in the pan for 1 minute before transfering to a plate. Repeat with remaining mixture.
