Description

Fluffy, quick and delicious, these pancakes will leave all others behind. Also makes wonderful waffles!

Ingredients

  • 2 cups Sifted Flour
  • 2 Tablespoons Sugar
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Salt
  • 1-¾ cup Milk
  • ⅓ cups Oil
  • 2 whole Eggs, Separated

Preparation

Sift dry ingredients together into a mixing bowl. In separate bowl, combine milk, oil and slightly beaten egg yolks, stirring to mix well. Add dry ingredients to the wet all at once and beat until smooth.

Beat egg whites until soft peaks form and fold into the batter.

Cook up the pancakes on your griddle with or without a slathering of butter and enjoy the goodness.
