A rich and creamy pasta dish that will leave you coming back for more!
Ingredients
- 6 ounces, weight Angel Hair Pasta
- 1 Tablespoon Olive Oil
- 1 Medium Onion, Diced
- 2 cups Cremini Mushrooms, Sliced
- 3 cloves Fresh Garlic, Minced
- 4 cups Fresh Spinach
- 1 cup Half-and-half
- 2 ounces, weight Crumbled Goat Cheese
- ¼ cups Grated Parmesan
- Salt And Pepper, to taste
Preparation
Cook pasta according to package directions. Then drain and set aside.
Heat a saute pan over medium/high heat and then add the olive oil. Once the oil is hot (30 seconds or so), add the onion, mushrooms and garlic. Cook until the mushrooms are tender and the onions have softened but are still crisp, approximately 5-7 minutes. Add the spinach and cook another 4 to 4 1/2 minutes until the spinach has wilted.
Add the half-and-half to the pan and turn the heat to high until the mixture just starts to boil. Then reduce heat to a simmer and allow the half-and-half to thicken, stirring occasionally, for about 3-5 minutes. Mix in the goat cheese and allow it to melt.
Next, add the Parmesan and stir it into the mixture. At this point you are ready to add the pasta. Mix in the pasta little by little and fold it into the mixture until combined. Add salt and pepper to taste.
Top with more Parmesan and enjoy! Serve with garlic bread and a good glass of wine.
