Description
This Whole Wheat Pasta Primavera is loaded with delicious vegetables and tons of flavor, perfect for lunch or dinner!
Ingredients
- 8 ounces, weight Whole Wheat Pasta
- 1 whole Zucchini
- 1 whole Cipollini Onion
- 1 whole Small Eggplant
- 6 whole Mushrooms
- 8 whole Asparagus Spears
- 4 Tablespoons Olive Oil
- 1 cup Spinach
- ½ teaspoons Salt
- 1 pinch Pepper
- Fresh Basil, Cherry Tomatoes, And Parmesan Cheese, For Garnish (optional)
Preparation
Cook pasta according to package directions. Chop all vegetables except spinach leaves.
Place olive oil in a large saucepan over medium heat. Add chopped onion and a pinch of salt. Cook until translucent in color. Add vegetables and salt and pepper to taste. Mix so all vegetables get a coating of olive oil.
Place lid on pan and cook, stirring occasionally until vegetable are tender. Add drained pasta to saucepan and stir.
Plate and garnish with basil and cherry tomatoes and a sprinkle of Parmesan cheese, if desired.
