Description

Southern Certified Peach Cobbler can be made with any fruit—canned, fresh, or frozen. It’s all in the pastry! My grandmother’s recipe is trusted and true!

Ingredients

  • 4 cups Fruit, Canned, Fresh Or Frozen
  • 1 cup Water, If Using Fresh Fruit
  • 1 cup Sugar, If Using Fresh Fruit
  • 1 stick Butter
  • 2 Tablespoons Ground Cinnamon Or Allspice (optional)
  • FOR THE PASTRY:
  • 1-½ cup Flour
  • ½ cups Oil (hers Called For Crisco; Just Use Vegetable Oil)
  • 1 teaspoon Baking Powder
  • ½ cups Milk
  • 1 pinch Salt

Preparation

Preheat oven to 350ºF.

If using frozen or fresh fruit, you’ll want to make a syrup. Put fruit with 1 cup water and 1 cup of sugar in a large saucepan. Bring to boil and set aside. If using canned fruit, skip this step.

For the pastry, in a large bowl, combine flour, oil, baking powder, milk and salt. Combine with hands and put in fridge for about 20 minutes.

Roll pastry out on a lightly floured surface, and press it like you would a pie dough, pretty thinly. Cut it into strips.

Pour warmed fruit/syrup into the pan with butter. Do not stir. Take the strips of dough and tuck them into the fruit syrup.

Bake at 350ºF for about 50 minutes, until pastry dough rises and browns.
