Description
Sometimes all that you need is a good, old-fashioned cookie. These Peanut Butter Chocolate Chip Cookies are just that. Rich chocolate chips are smoothed out by the velvety taste of peanut butter in each bite.
Ingredients
- 16 Tablespoons Butter, Softened
- ½ cups Sugar
- ½ cups Brown Sugar
- 2 Eggs
- 1 teaspoon Vanilla Extract
- ½ cups Peanut Butter
- 2-¼ cups Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 11 ounces, weight Dark Chocolate Chips
Preparation
Preheat oven to 375ºF. In the bowl of an electric mixer, beat butter, sugar and brown sugar together on medium speed until light and fluffy, about a couple minutes. Reduce speed to low and add 1 egg at a time, making sure to wipe down the sides and bottom of the bowl in between each addition. Mix in vanilla extract and peanut butter on low speed until just combined.
In a small bowl, combine flour, baking soda and salt. With mixer speed on low, slowly add flour mixture into butter and peanut butter mixture. Mix until a dough has formed, about 1 minute.
Using a rubber spatula, fold chocolate chips into the dough until completely incorporated. Scoop dough in rounded tablespoons onto a non-greased baking sheet, spacing them at least a couple inches apart. Bake cookies for 10–12 minutes, or until the tops are slightly golden brown and being careful to not overcook the bottoms of the cookies.
Remove cookies from the oven and allow to cool for a couple minutes on the baking sheet before transferring them to a wire rack to continue cooling. Enjoy!
