Peanut Butter Cookie Dough Dip

    Description

    A healthy version without a single ingredient you’ll feel bad about eating. Dig in!

    Ingredients

    • 5 ounces, weight Tofu (1/4 Of A 20-ounce Block) Drained And Pressed To Remove Moisture
    • ¼ cups Oats
    • 2 Tablespoons Peanut Butter
    • ½ Tablespoons Turbinado Sugar
    • ½ teaspoons Vanilla Extract
    • ¼ teaspoons Salt
    • 1 Tablespoon Cacao Nibs

    Preparation

    Combine all ingredients except cacao nibs in a food processor and process until smooth, scraping down the sides of the bowl once or twice. Add cacao nibs and process for 10-15 seconds more until incorporated and chopped up just slightly.

    Keep refrigerated. Great for dipping with apple slices or other fruit, cookies, etc.

    * Note:
    I used extra firm tofu because that’s what I had on hand and it came out fine/smooth. If you have silken, it would probably be even better.
