Pecan-Crusted Baked Cauliflower Florets

Description

Cauliflower florets, breaded and baked with pecans!

Ingredients

  • 1 head Large Head Fresh Cauliflower
  • 2 whole Beaten Large Eggs
  • ¼ teaspoons Each Salt And Black Pepper
  • 2 cups Bread Crumbs (or Panko)
  • 3 cups Chopped And Crushed Pecans

Preparation

Preheat oven to 375 F. Bring a large pot of water to a boil.

Rinse the whole head of cauliflower, remove the stem and green leaves. Cut off large pieces of florets and place them in the pot of boiling water for 3 minutes. Use a slotted spoon and remove the florets from the water and allow them to drain. When cooled add florets into a large mixing bowl.

Add beaten eggs, salt and pepper and breadcrumbs into the bowl with the cauliflower florets and stir gently to coat the florets.

Place chopped crushed pecans in a shallow bowl. Place cauliflower florets on top of crushed pecans and press pecans into all sides. Place florets on a non-stick baking sheet in a single layer. Cover the dish with a sheet of foil. Bake at 375 F for 20 minutes.
