Pepper Jack Beer Bread Muffins

Description

These pepper jack beer bread muffins are gameday ready. Beer. Carbs. Cheese. The trifecta of gameday appetizers all in one bite.

Ingredients

  • 1-½ cup All-purpose Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt
  • ¼ cups Canola Oil
  • ¾ cups Beer (pale Ale)
  • ¾ cups Shredded Pepper Jack
  • 1 pinch Red Pepper Flakes (optional)

Preparation

Preheat oven to 350 F (175 C). Spray 9 cups in a standard size muffin tin with natural cooking spray.

In a bowl, mix together the flour, baking powder and salt. Mix in the oil and beer. Set a large pinch of the cheese aside for topping the muffins, and fold the rest of the cheese into the bowl with the other ingredients.

Distribute the batter evenly among the muffin tins. Top each of the muffins with a pinch of red pepper flakes. Then, sprinkle cheese on top.

Bake for 18 to 20 minutes or until a toothpick inserted in the center comes out clean. Remove from oven. Let them cool for a few minutes and serve warm. You can store them in an airtight container at room temperature for a few days.
