Description

A fresh blend of tomato, jalapeno, cilantro, onion, garlic and lime juice. Pico de gallo is a great with tortilla chips, steaks, quesadillas, and even fish!

Ingredients

  • 2 cloves Garlic, Finely Minced
  • 1  Scallion, Finely Chopped
  • 1  Lime, Juiced
  • 6  Plum Tomatoes, Seeded And Diced
  • 3 Tablespoons Cilantro, Chopped
  • 1  Jalapeno, Seeded And Diced
  • Salt And Pepper, to taste

Preparation

In a bowl, combine minced garlic and scallion. Add lime juice and let sit for about 5 minutes. This is when I seed and dice my tomatoes.

After 5 minutes, add the tomatoes, cilantro, jalapeno,and salt and pepper.

It is best to let the flavors marinate for about 30 minutes. Check the seasoning and adjust if needed. Then serve with either tortilla chips or any dish of your choice. Can be kept in fridge in a closed container overnight.
