Pimento Cheese Tea Sandwiches

Description

These sandwiches are great anytime. No need to heat up your house on hot days. Just serve these and make everyone happy.

Ingredients

  • 3 ounces, weight Cream Cheese
  • ½ cups Mayonnaise
  • 1 cup Grated Monterey Jack Cheese
  • ½ cups Grated Sharp Cheddar Cheese
  • 3 Tablespoons Diced Pimentos
  • 2 teaspoons Grated Onion
  • ¼ teaspoons Kosher Salt
  • ¼ teaspoons Black Pepper
  • 30 slices Whole Grain Bread
  • 15 slices Bread And Butter Pickles (optional)

Preparation

In a medium-sized bowl combine everything except the last two ingredients.

Lay about 15 slices of bread on a cutting board and slather the pimento spread in a thin layer all over them but try not to cover the crusts (you’re going to cut them off later). Place a slice of pickle on top of each sandwich if desired. Top with the other 15 slices of bread. Place the sandwiches on a baking sheet and wrap it with plastic wrap.

Refrigerate until ready to serve. Put the sandwiches on a cutting board, and cut the crust off of each. Cut each sandwich diagonally to make two smaller sandwiches. Serve chilled.
