Description
I love pancakes—really, really love pancakes. However, I cannot eat the same, boring plain pancake over and over.
I must have variety, and from chocolate to granola, I will try it. These pina colada pancakes were a definite hit.
Ingredients
- ½ cups Gluten Free Baking Mix
- ½ teaspoons Gluten Free Baking Powder
- ¼ teaspoons Salt
- 1 Egg
- ¼ teaspoons Rum Extract
- ⅛ teaspoons Coconut Extract
- 2 teaspoons Coconut Oil
- 2 Tablespoons Sour Cream
- 4 Tablespoons Milk
- 2 Tablespoons Chopped Frozen Pineapple
- 1 Tablespoon Unsweetened Shredded Coconut
Preparation
Whisk dry ingredients in a mixing bowl. Stir in egg, extracts, oil, sour cream, and milk. Fold in pineapple and coconut.
Cook on a greased griddle or frying pan as you would normal pancakes, about ¼ cup per pancake over medium heat, about 3–4 minutes each side.
