A greeña piña colada. With spinach ’cause it’s healthy, with rum ’cause it’s delicious!
Ingredients
- 1-½ cup Lite Coconut Milk, Chilled
- ¼ teaspoons Almond Extract
- 1 Tablespoon Dark Rum (optional)
- 2 Tablespoons Maple Syrup
- 1 whole Small Banana, Frozen
- 1 cup Chopped Pineapple
- ¼ cups Plain Yogurt
- 2 cups Loosely Packed Fresh Baby Spinach
- 2 Tablespoons Toasted Coconut (optional Garnish)
Preparation
In a large blender, combine all ingredients (except toasted coconut, if using). Blend until very few specks of the baby spinach remain. Enjoy garnished with toasted coconut.
