Pineapple Icebox Cake

Description

A super refreshing and easy no-bake cake.

Ingredients

  • 1 can (20 Oz. Size) Crushed Pineapple
  • 3 Tablespoons Light Brown Sugar
  • 1 teaspoon Pure Vanilla Extract
  • 1 tub (8 Oz. Size) Cool Whipped Topping (Thawed)
  • 16 whole Graham Cracker Sheets (4 Small Rectangles Per Sheet)

Preparation

In a large mixing bowl add crushed pineapple, brown sugar and vanilla extract and stir well with a spatula. Fold in Cool Whip topping. Set aside.

In an 8″ x 8″ glass dish add the first layer of graham crackers over the bottom of the dish. Add 1/3 of the pineapple mixture and spread it out with an offset spatula. Repeat with 2 more layers of each. Cover with plastic wrap and refrigerate overnight for best results.

Serve and enjoy!
