Description
Foodvangelist’s Zucchini Pizzas inspired me to make this (I didn’t have any more zucchini). It’s so good, and like her recipe, you don’t even realize the crust is missing!
Ingredients
- 8 whole Egg Whites
- 4 whole Eggs
- 1 cup Pizza Sauce (your Own Or In A Jar)
- 1 cup Mozzarella Cheese, Shredded
- ½ cups Parmesan Cheese, Shredded
- Optional Pizza Toppings, Use Your Favorite
Preparation
Preheat oven to 375F.
Whisk together egg whites and eggs. Pour eggs into a greased oven safe skillet (I use cast iron). Bake for 10 minutes or until set. Remove from oven when eggs are set.
From here on, treat it like regular pizza:
Cover the egg ‘crust’ with pizza sauce
Layer with cheese and any toppings you may choose
( I used spinach and feta, but you use what you
like!)
Place ‘pizza’ back in oven, under the broiler this time. Broil until cheese is bubbly ( about 2-5 minutes). Enjoy your low carb pizza!
P.S. I am going to use roasted veggies next time!
