Ingredients
- FOR THE OATMEAL:
- ⅔ cups Old Fashioned Oats
- 1 cup Water
- ⅔ cups Canned Pumpkin
- ⅓ cups Almond Milk
- 2 teaspoons Ground Cinnamon
- ¼ teaspoons Nutmeg
- ½ teaspoons Ginger
- 2 teaspoons Stevia
- FOR THE TOPPING:
- 1-½ Tablespoon Whole Wheat Flour
- ¼ cups Nuts (pecans Or Walnuts)
- ½ teaspoons Oil
- 1 Tablespoon Light Maple Syrup
Preparation
Preheat your oven to 350°F.
In a medium-sized microwave-safe bowl combine oats and water. Microwave on high for 2 minutes. Stir in pumpkin, almond milk, cinnamon, nutmeg, ginger and stevia. Pour equally into two 6-inch ramekins.
In a small bowl combine flour, nuts, oil and maple syrup until it forms crumbles. Sprinkle crumbles over pumpkin oatmeal.
Bake for 15-20 minutes. Then remove the ramekins from the oven and let oatmeal cool 5 minutes before serving .
