Pumpkin & Shortbread Parfaits

Scrumptious dessert for two!

Ingredients

  • 6 whole Shortbread Or Sugar Cookies, Crumbled
  • ½ cups Pumpkin Pie Filling
  • 4 ounces, weight Cool Whipped Topping, At Room Temperature
  • Nutmeg
  • Ground Cinnamon, For Dusting

Preparation

In fluted glasses, stemware, or dessert cups, add one layer (about 2 inches) of crumbled shortbread cookies. Top with several teaspoons of pumpkin pie filling, then whipped topping. Repeat one more layer of each of the three ingredients. Sprinkle with nutmeg and cinnamon on top.

You can chill this for 20–30 minutes, if desired, or serve immediately.
