Ingredients
- 10 ounces, fluid Chunk Light Albacore Tuna, Drained
- 2 Tablespoons Red Onion, Minced
- 2 Tablespoons Mayonnaise
- 1 Tablespoon Fresh Lemon Juice
- 1 Tablespoon Capers, Drained
- ⅛ teaspoons Salt
- ¼ teaspoons Red Pepper Flakes
- Freshly Ground Pepper, to taste
- 4 Sliced Whole-wheat Bread, Toasted (I Prefer Slices Of Artisan Baker-style Bread)
- 2 Roma Tomatoes, Sliced
- ½ cups Shredded Sharp Cheddar Cheese
Preparation
Preheat broiler to high.
Combine tuna, red onion, mayo, lemon juice, capers, salt, red pepper flakes and pepper in a medium bowl. Spread ¼ cup of the tuna mixture on each slice of toast and top with tomato slices. Sprinkle the tops with about 2 tablespoons cheese each.
Place sandwiches on a baking sheet and broil until the cheese is bubbling and golden brown, 3 to 5 minutes. Keep a very watchful eye on them because they can and will burn in an instant!
