Description

I absolutely love Asian pickled cucumbers and order it all the time when I go out to eat! These are the perfect combination of sweet, sour, and spicy, and they are perfect for the summer because they are served cold. Since I order this all the time at various restaurants, I decided to make my own. This such a healthy dish and a great way to get your veggies in!

Ingredients

  • 2 whole English Cucumbers
  • 1 teaspoon Sesame Oil
  • 2 Tablespoons Apple Cider Vinegar
  • 1 Tablespoon Rice Vinegar
  • Sriracha, To Taste
  • 2 cloves Garlic
  • 2 teaspoons Sugar
  • Salt And Pepper, to taste

Preparation

Slice cucumbers into 1/4-inch pieces. Lightly salt cucumbers and store in the fridge while you prepare the marinade.

In a bowl, measure sesame oil, vinegars, Sriracha and mix until combined. Dice garlic and add to the marinade along with sugar, salt, and pepper.

Pour marinade over the sliced cucumbers and mix until each cucumber is coated with the sauce. Don’t toss out the extra marinade!

Store cucumbers in the fridge for at least 30 minutes. However, I recommend letting them marinate for 1 hour. Enjoy!
