Cheerful and refreshing cocktail from Venice!
Ingredients
- 1-⅞ ounces, weight Raspberries
- 2 Tablespoons Icing Sugar
- 2 whole Mint Leaves
- 1 bottle (750ml Bottle) Prosecco
Preparation
To make the bellini, in a food processor blend the raspberries with sugar and mint, then pass through a sieve. Spoon a teaspoon or tablespoon of raspberry puree in a champagne glass and top with chilled Prosecco. A few raspberries may be added for decoration. Serve immediately.
