Raw Blackcurrant and Fig Jam

    Description

    Delicious raw blackcurrant chia seed jam sweetened naturally with dried figs. Can be made in less than 5 minutes!

    Ingredients

    • 3 cups Fresh Blackcurrants
    • 2 whole Soft Goey Dried Figs (or More Depending On Desired Sweetness)
    • 1 teaspoon Apple Cider Vinegar (optional, But Helps It Keep Longer In The Fridge)
    • 1 teaspoon Chia Seeds

    Preparation

    Using an immersion blender or food processor, combine all of the ingredients until smooth.

    If you prefer a chunky jam, whiz half of the blackcurrants, the figs, vinegar, chia, and then mix in the remaining blackcurrants by hand. Test for sweetness (all blackcurrants vary greatly) then scrape into a jar and place in the fridge.

    Keeps in the fridge for up to 2 weeks if you’ve used the vinegar or 1 week if you’ve opted to omit it.
