Rhubarb Slush

    Description

    This is a refreshing springtime recipe, and a great way to use up all of the fresh rhubarb.

    Ingredients

    • 8 cups Chopped Rhubarb
    • 2 quarts Water
    • 2 cups Sugar
    • ½ cups Lemon Juice
    • ½ cups Vodka Or Rum
    • 1 box Strawberry Jello (3 Oz.)

    Preparation

    Cook rhubarb, water, sugar and lemon juice until rhubarb is tender. Put through a strainer.

    Add jello and vodka or rum; freeze.

    Scoop slush into glass until half full, fill remainder of glass with ginger ale.
