Description
These pancakes are dynamite. They are a healthier option compared to traditional pancakes, without skimping on taste. With the added eggs and ricotta cheese, they pack 18 grams of protein per serving (3 pancakes).
Ingredients
- 6 Eggs
- 1 cup Ricotta
- ½ cups Flour Or Whole Wheat Pastry Flour
- ¾ teaspoons Baking Powder
- 2 Tablespoons Vegetable Oil
- ½ teaspoons Salt
- ½ teaspoons Vanilla
- Butter For Griddle
- Blueberries Or Thinly Sliced Bananas (optional)
- Mashed Bananas (optional)
- Maple Syrup, For Topping
Preparation
Combine eggs, ricotta cheese, flour, baking powder, oil, salt and vanilla in a large bowl. Whisk.
Heat a skillet/griddle on medium and grease with butter.
Spoon batter (about a quarter cup) onto the skillet/griddle. Add your toppings if you are doing so. Cook until golden brown (a couple minutes) and flip. Cook the other side until done. Remove cooked pancakes to a plate. Finish cooking the rest of the batter.
