Roasted Pear and Quinoa Breakfast

Description

A yummy breakfast cereal topped with roasted pears. I knew roasting veggies was wonderful, but fruit is divine. Naturally super sweet, and delish, and good for ya too!

Ingredients

  • 2 whole Bosc Or Anjou Pears
  • 1 cup Quinoa
  • 2 cups Water
  • 1 dash Salt
  • 1 teaspoon Cinnamon
  • ¼ cups Brown Sugar (optional)
  • 2 ounces, fluid Maple Syrup

Preparation

Preheat your oven to 425 F. Spray a large cookie sheet with non-stick spray so your pears don’t stick. Wash pears and cut them into quarters. Cut the core out of each quarter and slice each quarter into 3-4 slices that are approximately 1/4 inch thick. Arrange the pear slices on the cookie sheet. Place the pears in the preheated oven and let the little babies roast for 20-25 minutes. You want the pears to start to brown around the edges.

While the pears are roasting place the quinoa, water and salt in a medium sauce pan. Turn the heat to high and bring the water to a boil. Once the water comes to a boil, turn the heat to low, place a lid on the pan, and let the quinoa simmer for 20 minutes. You’re going to cook it the same as rice. Once the quinoa has absorbed all the water turn the heat off and let the quinoa sit until your pears are ready.

To serve this little breakfast I put a big scoop of hot quinoa into a bowl and top it with tons of roasted pears. You can add syrup, brown sugar and/or cinnamon. I love to eat it hot with a little bit of cold milk poured over the top. This brekky is lovely!
