Roasted Red Beet Hummus

Description

A healthy dip, perfect for a holiday party!

Ingredients

  • 1  Large Roasted Or Canned Beet (double This Amount If Small/medium)
  • 1 can (15 Oz. Size) Chickpeas, Drained.
  • 1  Large Lemon, Zest And Juice
  • Salt And Black Pepper To Taste
  • 2 Tablespoons Tahini
  • 2 cloves Garlic (more If Desired)
  • 2 Tablespoons Olive Oil

Preparation

1. Using a food processor, chop the beet into small pieces. Add remaining ingredients except olive oil and blend until smooth.
2. Slowly pour the olive oil into the food processor while it is running and blend until smooth.
3. Taste and adjust seasonings and liquids to desired taste and consistency. (I made no adjustments.)
4. Serve with pita bread, pita chips, or sliced veggies.
