Rosemary Citrus Spritzer

Description

A super refreshing little spritzer.

Ingredients

  • 2 whole Lemons
  • 4 whole Mandarin Oranges
  • 4 sprigs Rosemary
  • ½ cups Sugar
  • ½ cups Honey
  • Club Soda And Ice For Serving

Preparation

Using a vegetable peeler, peel large strips of zest off 1 lemon.

Juice both lemons and all of the oranges into a bowl or measuring cup. You should end up with 1 cup of juice. If you have a bit less, top liquid off with water until you have a total of 1 cup.

Add zest, juice, rosemary, sugar and honey into a small saucepan. Heat over medium heat until mixture comes to a boil, stirring constantly. Allow mixture to boil for 1-2 minutes or until all sugars are totally dissolved. Remove pan from heat.

Allow syrup to cool for 15 minutes. Strain out all solids and allow syrup to cool completely.

Assemble the soda:
Fill a glass with ice. Add 2-3 tablespoons of syrup to glass and top off with club soda. Stir well and garnish with lemon/orange slice or sprig of rosemary.
