Rosti Casserole with Fried Eggs

    Description

    This Rosti Casserole with Fried Eggs is the perfect BLD meal (breakfast, lunch or dinner) with flavorful potatoes baked to perfection and topped with an egg.

    Ingredients

    • 2 Tablespoons Flour
    • 1-¼ cup Fat Free Greek Yogurt
    • 1-½ cup Turnip, Grated
    • 1-¼ cup Gruyère Cheese, Grated
    • ⅓ cups Butter, Melted
    • ¼ cups Fresh Chives, Chopped
    • 1-¼ teaspoon Salt
    • ½ teaspoons Freshly Ground Black Pepper
    • ¼ teaspoons Ground Nutmeg
    • 1 package (30 Oz. Size) Frozen Shredded Hash Brown Potatoes, Thawed
    • Cooking Spray
    • 8 whole Large Eggs

    Preparation

    Preheat oven to 400 F.

    In a large bowl, add flour, yogurt, turnip, Gruyère cheese, melted butter, chives, salt, pepper, nutmeg and thawed hash-browns. Mix well until thoroughly combined. Spread the mixture into a 9″x 13″ glass baking dish. Bake for 40 minutes.

    In a large frying pan coated in cooking spray, fry the eggs over medium to medium-high heat until you reach your desired doneness.

    Cut casserole into 8 pieces and top each piece with a fried egg. Serve immediately.
