When I asked a food blogger friend for an appetizer idea, she suggested, “cucumber slices with sour cream something, chive and something something.” Here’s what I came up with.
Ingredients
- 10 slices Pumpernickel Bread, Each Cut Into Two 2 1/4-inch Rounds
- 3 ounces, weight Garlic And Herb Soft Spreadable Cheese
- 20 slices Thin English Cucumber
- 4 ounces, weight Thinly Sliced Smoked Salmon
- 1 ounce, weight Sour Cream
- Shallot Salt
- Finely Ground Black Pepper
- Fresh Chopped Chives
Preparation
Place pumpernickel rounds on a serving tray. Top with 1/2 teaspoon dollop of soft spreadable garlic and herb cheese (like Alouette or Boursin). Add 1 thin slice of cucumber and press down to glue in place. Top with a bite-size piece of smoked salmon. Add about 1/4 teaspoon dollop of sour cream and sprinkle liberally with shallot salt, finely ground black pepper, and chopped fresh chives. Serve immediately.
