Description
Take your leftovers from your salsa verde and make it into chilaquiles! This quick recipe takes less than 15 minutes to throw together.
Ingredients
- 4 whole Servings Leftover Salsa Verde Chicken (Mine Is Great!)
- 4 cups Tortilla Chips
- 8 whole Eggs
- 4 Tablespoons Cotija Cheese
- 2 whole Limes, Cut Into Wedges
- 1 bunch Cilantro, Chopped
- 2 whole Green Onions, Chopped
Preparation
Pour leftover salsa verde chicken into a large pan over medium heat. Reheat to a low simmer.
Fold in tortilla chips until evenly covered. Transfer to a bowl.
Meanwhile, fry eggs in a separate pan to desired temp. Add to bowl with chilaquiles.
Add cotija cheese, lime wedges, cilantro and green onions to the top and serve.
