Description

Quick and easy main recipe that also tastes incredible. This Sausage and Potato Bake is a perfect alternative to bangers and mash!

This recipe uses only a few ingredients, takes less than 60 minutes and tastes incredible!

Ingredients

  • 1 kilogram Chopped Charlotte Potatoes
  • 3 Tablespoons Olive Oil
  • 2 sprigs Rosemary
  • 500 grams Sausages
  • 1  Red Bell Pepper, Sliced
  • 1  Yellow Bell Pepper, Sliced
  • 1  Red Onion, Sliced
  • 2 Tablespoons Balsamic Glaze

Preparation

Preheat oven to 200ºF.

Place chopped potatoes in a bowl and mix with olive oil to ensure they are fully covered. Season with salt and pepper and transfer to an oven dish. Add a few sprigs of rosemary and place in the oven.

Put sausages into oven, turning occasionally.

Add peppers and onion and into an oven-safe dish. Add balsamic glaze and mix with hands to coat evenly. Place in the oven as well.

After 30–40 minutes or when everything is cooked, chop sausage into 1cm slices and combine with potatoes and peppers. Return to oven for 5–10 minutes. Plate up and enjoy!
