Description
This is a quick, yet delicious weeknight meal with Italian sausage and zucchini in red sauce over a bed of Parmesan polenta. The more Parmesan the better!
Ingredients
- 2 cups Water
- ½ cups Dry Polenta Cornmeal
- ¼ cups Parmesan, Grated
- 2 whole Italian Sausage Links, Sliced Into One Inch Disks
- 1 whole Zucchini, Sliced Into One Inch Disks
- ⅓ cups Marinara Sauce
- Salt And Pepper
Preparation
Begin by preparing the polenta. Bring water to a boil in a saucepan before adding the polenta/cornmeal. Stir continuously until it’s ready, about five minutes. Remove from heat. Stir in Parmesan. Add salt and pepper to taste.
Add sausage and zucchini into a saute pan over medium heat. Cook until sausage is cooked through and zucchini tender, about five minutes. Add marinara sauce to pan then bring it to a simmer until heated through.
Serve sausage and zucchini mixture over a bed of polenta. Top with extra grated Parmesan if desired. Enjoy!
